Haiti - Leisure : Did you know ? #25

Did you know that sumac Sumac is a fascinating spice extracted from the berries of a wild shrub that grows in the rocky terrains of the Mediterranean and Middle East.

Its lemony and slightly astringent taste brings freshness to dishes without using liquids such as vinegar or lemon. Widely used in Lebanese, Syrian or Turkish cuisine, it is the key ingredient in the "Za'atar" mixture (thyme, sumac, toasted sesame seeds, and salt).

Historically, sumac was already used by the Romans for its medicinal and culinary properties before the introduction of lemons to Europe.

By rediscovering this spice, we realize to what extent regional biodiversity has shaped taste identities long before the globalization of ingredients. It is an invitation to respect specific terroirs and to understand that each nation has unique natural treasures which deserve to be preserved from conflicts and the systematic forgetting of ancient traditions.
